Honey Poached Peach Upside down Cake


I had a craving for peaches and had been meaning to try them poached in honey for a while.  So why not turn that into a cake! The syrup made from the poaching liquor  is delicious due to the hint of peach flavour.  It may seem like a lot to glaze the cake but it seems to absorb it all happily(minus a couple of spoons i absorbed myself!).








100g caster sugar * 150g honey * ½tsp vanilla extract * 400ml water * 4 peaches * 175g butter * 175g caster sugar * 3 med eggs * ½tsp vanilla extract * 175g SR flour

Serves 12



Cut the peaches in half and de-stone them. Heat the water, honey, 100g sugar and ½tsp vanilla until simmering. Add the peaches and allow to gently poach for about 20min until soft.



Butter the bottom of a 20cm round cake tin and arrange the peaches cut side down. Reduce the leftover liquid by about ½ so if makes a thin syrup. Add a couple of tablespoons to the cake tin.



Cream together the butter and remaining sugar. Individually beat in the eggs then vanilla. Gently fold in the flour. Place spoonfuls evenly amongst the peaches. Bake for around 40min until done. Allow to cool slightly in the tin then flip onto a plate. Spoon over the remaining syrup.
