Mulled Wine Brownies


I was playing around with ideas for festive treats and this came to mind after making mincemeat brownies last year.  They use a fantastic rich brownie base recipe.  I add nutmeg as there wasn't any in the mulled wine i got so you may not need to add it.  You could also make your own mulled wine if so inclined.  If you aren't feeling festive then you can substitute for a good full bodied red wine.

Mango, Lime, White Chocolate Cake



Ok so I've been a little bit slack with this recently.  There has been a recipe that didn't work out as well as i had hoped and i didn't write down another but might post it later anyway.  I couldn't think what to make and these just popped into my head.  They are a similar idea to brownies but lighter.  In the recipe when you add the hot butter to the chocolate it is likely it will separate but this is fine and will come together with the addition of the eggs.

Honey Poached Peach Upside down Cake


I had a craving for peaches and had been meaning to try them poached in honey for a while.  So why not turn that into a cake! The syrup made from the poaching liquor  is delicious due to the hint of peach flavour.  It may seem like a lot to glaze the cake but it seems to absorb it all happily(minus a couple of spoons i absorbed myself!).

Chocolate, Rum Banana Cake


I think this is a flavour combination you cant go wrong with.  It is a fantastic gooey cake that is really easy to make.  Although it works on its own, it would be good with a buttercream icing or a rum butter glaze.  I made it into 1 loaf cake and 1 round but the mixture should be enough for 3 loaf tins.

Raspberry and White Chocolate Jam Jar Cheesecake


I made these up when i had too much white chocolate ganache for another recipe. This is a really fun and easy way to make cheesecake as it is just set in the fridge and it doesnt matter if any of the layers are set properly.  It can make them quite big but you can never have too much cheesecake.


Apple cupcakes with lemon icing


The sheer quantity of apple in these cupcakes give them such a great taste and keep them very moist.  The mixture will seem a little runny but they bake fine, and although they don't rise much they are still light.  I really like the combination of lemon with apple so the icing works great here.

Lemon cake with white chocolate ganache and red bean paste


This was an adaption of an idea i had for white chocolate and adzuki bean blondies.  The fillings are quite rich so the lemon syrup glaze helps to cut through this to give a nicely balanced cake.  It was also my entrant into a baking competition which although not a winner got great feedback.

Bramble Millionaire's Shortbread

This was an idea i had for experimenting with millionaire's shortbread.  I wasn't sure what effect adding a largely water based puree would have on the caramel.  Thankfully it seemed to have little effect and turned out a wonderful tasting caramel.  The sharp fruitiness really helps to balance out what can be a very sweet treat.  I imagine this would also work very well with other berries like raspberries, redcurrants, etc.

First post


  So i finally got around to actually doing this.  I thought i would keep an online record of my baking.  It will not be exclusively cakes but anything sweet and tasty.

  The recipes are written so i could follow them.  I have tried to make it so they are easy to understand by others but i may need a while to get better at this.  I have tried to get the ingredients quantities correct but im not the best at writing things down as i go along.  Therefore things may be slightly out but hopefully not too much.

  I am also just using a simple point and shoot camera so my photography is quite basic.  The food will still look tasty though.
