Chocolate, Rum Banana Cake


I think this is a flavour combination you cant go wrong with.  It is a fantastic gooey cake that is really easy to make.  Although it works on its own, it would be good with a buttercream icing or a rum butter glaze.  I made it into 1 loaf cake and 1 round but the mixture should be enough for 3 loaf tins.





300g butter * 100g caster sugar * 200g light muscovado sugar * ½tsp vanilla extract * 5 bananas * 200g dark chocolate * 5 med eggs * 150ml dark rum * 350g SR flour

Makes 3 loaf cakes



Cream the butter and sugars together until pale. 



Crush the bananas with a fork then beat into the butter and sugar along with the vanilla. Individually beat in the eggs. Grate or finely chop the chocolate then add to the mixture with the rum.



Gently fold in the flour then divide between 3 greased, 400g loaf tins. Bake in a 180oC oven for about 45-50min.
