Mango, Lime, White Chocolate Cake



Ok so I've been a little bit slack with this recently.  There has been a recipe that didn't work out as well as i had hoped and i didn't write down another but might post it later anyway.  I couldn't think what to make and these just popped into my head.  They are a similar idea to brownies but lighter.  In the recipe when you add the hot butter to the chocolate it is likely it will separate but this is fine and will come together with the addition of the eggs.








200g caster sugar * 200g butter * 200g white chocolate * 4 medium eggs * 2 limes * large firm mango * 200g SR flour

Makes about 48



 Melt the butter in a pan with the sugar then pour into a bowl with the broken up white chocolate. Stir while the chocolate melts. Individually beat in the eggs along with finely chopped zest and juice of the limes. Cut the mango into small dice and add to the mixture. Gently fold in the flour.





Pour the mixture into a 11x9” rectangular tin and bake for about 30-35min at 180oC. Leave to cool the turn out and cut into small squares.
