I always try and have some emergency cake in the freezer, just in case. This cake was perfect for that as it just as good warm from defrosting quickly. The recipe is very similar to the cake in a sticky toffee pudding without the sauce. It's such a tasty moist cake it doesn't really need the sauce although a thick spreading of butter is good.
200g
dates *
200ml milk *
75g caster sugar *
75g light muscovado sugar *
75g butter *
½tsp vanilla *
2tbsp treacle *
2 med eggs *
175g SR flour

Roughly
chop the dates and heat gently in a pan with the milk. Stir the
mixture until the dates break down but still have some texture.
Take
off the heat and add the butter, vanilla, treacle and sugars. Beat
until it is combined and the butter has melted. Individually beat in
the eggs then fold in the flour.
Bake
for 30-35min at 170oC in a greased, lined 8” square tin.
