I don't seem to be doing so well with regular updates but never mind, 3 at once now. These were xmas presents so i, obviously, couldn't post when i made them. The photos are from the first time i made them and i didn't chill and cut the dough so the cookies are flatter than they should be. I'm not normally so fond of wholemeal flour in baking but these work really well with the dates and honey.
300g
wholemeal SR flour *
250g butter *
150g caster sugar *
3tbsp honey *
100g walnuts *
200g dates *
½tsp nutmeg

Cream
the butter and sugar together then mix in the honey. Roughly chop
the dates and walnuts and add along with the ground nutmeg.
Add the
flour to make a soft dough. Roll into a sausage shape about 6cm in
diameter , wrap in clingfilm and place in the fridge for 30min. Cut
into ~1cm slices and put onto a baking tray lined with greaseproof
paper, leaving space between the biscuits. Bake for 12min at 180oC
until the bottoms turn golden. Leave to cool on the paper until firm
then transfer to a cooling rack.
